Hemoglobin is a mob added by Harken Scythe. They are spawned when a Blood Crucible filled with Blood is destroyed. The size of the Hemoglobin depends on how much blood was in the crucible. When right-clicked with an Essence Keeper or Essence Vessel, it will be filled with blood.
